Summer is a great time for light and fresh food. For me peas and mint are a taste of summer, just like tomatoes and basil. Little bursts of sunshine on the palate.
This dip is a fabulous addition to any picnic, platter or sandwich; great tossed through pasta with sun-ripened tomatoes and maybe even a little smoked salmon.
Ingredients
2 cups cooked peas (or thawed frozen peas)
100g feta
1 clove garlic
3 - 4 Tablespoons olive oil
zest and juice of 1/2 a lemon
handful of mint &/or parsley
freshly ground pepper
Method
Combine all of the ingredients in a food processor or blender. Blend until smooth.
