My Mission:

To share health and nutrition information to help others fall in love with food and their bodies, by teaching simple, delicious and nutritious ways to eat for good health and well-being.

In this day and age, especially with the power of the internet, there are a lot of opinions leading to confusion about what food is healthy and what isn't. Here at Nicole’s Nutrition Kitchen I will be sharing my opinions and what I believe to be a healthy approach to this journey called "life". I aim to make sure my opinions are well grounded in sound scientific evidence to cut through the hype and nonsense.

About me:

Once upon a time I ran a gluten-free bakery - Elocin Specialty Foods - where I whipped up fabulous gluten-free foods. After 13 years I decided it was time to try something new, but it still had to involve food as that is my passion!

I love food from garden to plate.

So I went back to school, graduating in 2015 with a Science and Technology Graduate Certificate in Human Nutrition from Massey University. But it hasn't ended there as I am again back at Massey working towards a Post Graduate Diploma in Human Nutrition, as well as currently in the process of becoming registered with the Nutrition Society of New Zealand.

I don't believe in a one-size-fits-all approach to healthy eating. We are all so different, it's about finding what works for you.

For me, I have been living with food allergies and intolerance's for over 30 years. It has proven to be difficult at time but I now understand those difficulties and have a few tricks up my sleeve for coping. Which is why I ran a gluten-free bakery and now specialize in helping those that are lost and confused about how to eat with those restrictions. And as I am all about being unrestricted when it comes to food so I love helping people find their way back to being able to enjoy eating again.

To help those that aren't restricted by allergies but are caught up on the roller-coaster of calorie counting and fad diets I will show you how to jump off the roller-coaster and learn to love your body, love food and enjoy eating without any guilt.

Life is too short to count calories!

So what can I do to help YOU?

Well, that all depends on what YOU need.

We are each very different in what we need (and like) to make us happy and healthy, and finding that out is part of this fantastic journey called life. It can be a challenge but by staying positive, working together and having fun it doesn’t need to be daunting.

I am part of the Warkworth Acupuncture team. We provide a comfortable, relaxing environment for patients to derive optimal health benefits from acupuncture, nutrition and massage.

I am a member of the Nutrition Society of New Zealand and the New Zealand Nutrition Foundation.

I am also a cuisine columnist at Mahurangi Matters, where I share simple and delicious recipes.
