    Hello, I'm Nicole! Food Lover | Avid Gardener | Nutritionist | Cooking Coach.

    I don't follow or prescribe any particular type of diet. I'm all about eating intuitively, listening to my body and feeding it what it needs to be my perfect body (and I'm not talking about what anyone else considers perfect).

    I don't believe in a one-size-fits-all approach to healthy eating. We are all built differently and it's about finding what works for YOU!

    I can help you to:

    Summer yum! Bright and fresh summer salads.

    Some summer days it really is just too hot to be bothered cooking. That is where a simple and tasty salad is a great lunch or dinner option.

    Pile a bowl full of shredded lettuce. Combine a bunch of other delicious bits and bobs in a mixing bowl, such as:

    • cucumber, carrot, capsicum, radish
    • fresh, green peas 'n' beans
    • herbs - chives, parsley, mint, basil
    • tomatoes - fresh or sun-dried
    • meat or fish or tofu
    • avocado
    • fruit and nuts and seeds
    • even edible flowers

    You are only limited by your imagination and what you have on hand

    Dress with your favourite dressing or just a squeeze of lemon juice, a little olive oil and a grind of fresh pepper. Pile on top of the shredded lettuce and dig in!

    Since closing down the kitchen at the end of 2014 I have been (slowly) working on the recipes to change them to suitable for making in a home kitchen.

    All the Elocin Specialty Foods recipes are gluten free. To spot those recipes that are ex-Elocin look for the logo at the bottom of a recipes information page.

    Summer is a great time for light and fresh food. For me peas and mint are a taste of summer, just like tomatoes and basil. Little bursts of sunshine on the palate. This dip is a fabulous addition to any picnic, platter or sandwich; great tossed through pasta with sun-ripened tomatoes and maybe even a little smoked salmon.

    Herb Crusted Salmon

    Herb Crusted Salmon: I am not much of a meat eater but I do love fish. That means that you will see more fish than meat recipes throughout the website.

    Fish is a great protein source to have in your diet. It contains many important nutrients such as vitamins A & D and also omega-3 fatty acids (what we call good fats). Fish such as Salmon, Tuna, Sardines and Mackerel are high in these nutrients, and tinned versions are just as good as fresh. Here in New Zealand we are lucky as Kahawai and Mussels are readily available, reasonably priced and are packed full of good nutrients. One great thing that you get from including tinned Salmon, Sardine or Mackerel dishes is that they contain the bones (do eat them, they are a little crunchy) which give you a boost of calcium and magnesium. The calcium boost they give is important for those of us who need an alternative source to dairy foods. I aim to include at least one fresh and one canned fish meal per week. Fresh or smoked Salmon is saved for a treat; with the smoked a little goes a long way and can add extra flavour to a dish using tinned Salmon. However, Kahawai is a weekly dish in our house – fresh or as Smoked Fish Pie.

Iron is an important mineral for our bodies, vital for physical and mental health and well-being. It helps to carry oxygen in the blood, maintains a healthy immune system and helps in energy production. What you need to know before you go gluten free

When there is a topic that I am passionate about it is hard to shut me up, and going gluten-free is one such subject.

Which is why I have been giving public talks (with more scheduled) and I develop recipes and run cooking classes all revolving around making gluten-free living as easy and tasty as possible.

I have been lucky enough to be invited as a guest blogger over on the Eat Well NZ blog, talking about what you need to know before you go gluten free.

Eat Well NZ is a healthy living blog to guide you in learning to nourish your body and find balance in a world of confusing and sometimes extreme nutritional advice. Nicola Jackson of Eat Well NZ is a Registered Nutritionist, food lover, runner and believer in holistic well being. A Healthy Gut = A Healthy You!

Healthy GutYou might think that your gut - from stomach, through small intestine, to large intestine - is simply there just to digest your food, absorbed nutrients and excrete waste.

Now while all of those are vital functions of the gut, research is building to suggest that the health of our gut is actually key to much of our overall health and happiness, including our immunity, resistance to chronic disease and even mental health.

In our gut we carry a unique population of bacteria - called our 'microbiome'. This microbiome is made up of some very impressive numbers:

  • we carry around 2kg of bactera;
  • that 2kg is made up of trillions of bacteria;
  • they outnumber the cells in our bodies by about 10 to 1;
  • more than 1000 different species have been identified;
  • we carry about 150 - 170 different species each, which is a unique combination for each of us.

Autumn Eating

Summer Lovin'

Sunflower Don’t you just love summer!?!

Summertime at my place means a glut of gorgeous summer vegetables. Tomatoes, courgettes, cucumbers, corn and beans galore! The great thing about so many delicious vegetables is that it is very easy to get the recommended 5+ servings a day. Tomatoes on toast for breakfast, cucumbers and beans with lunch, corn and courgettes for dinner. And they are all great accompaniments for a BBQ dinner too.

In saying courgettes for dinner, I am having to find 1001 ways to use them up. They grow like triffids. If you miss picking them you end up with more than you bargained for. I recently found a marrow hidden behind a pumpkin. I have had to get a bit imaginative with how to use them.
