Kiwifruit Salsa

Heat reduces vitamin C content so salads or salsas that use vitamin rich foods are an excellent way to get around this. You can also make salad dressings that include juice from citrus fruits to get the vitamin C burst.

Ingredients:

2 green and/or golden kiwifruit

½ red capsicum (or pick your favourite capsicum colour)

¼ red onion, finely diced; or 1 spring onion, finely sliced; or 2 Tbsp. chopped chives

3 Tbsp. chopped parsley

2 Tbsp. chopped mint (or coriander)

2 tsp. lemon or lime juice

Pinch each salt and pepper

Method:

Peel and dice the kiwifruit. Combine the kiwifruit in a bowl with the rest of the ingredients. Stir carefully so as not to mash the kiwifruit.

Serve as a side dish with your next BBQ. Delicious with a juicy steak, a chicken drumstick or your favourite vegetarian sausages.
