Chicken Meatballs

This recipe is so simple, but has the potential to be the base for so many different dishes. I have put some serving suggestions below, but you might come up with some ideas or your own.

Ingredients

500g chicken mince

½ medium onion, finely chopped

1 Tablespoon chopped parsley

2 teaspoons fresh rosemary, chopped (1 tsp dried)

2 teaspoon lemon zest, finely grated

1 teaspoon salt

Pinch of pepper

Method

Preheat the oven to 180C. Line an oven tray with baking paper.

Combine all the ingredients in a bowl and smoosh with your hands to mix well.

Roll into balls of whatever size you want and place onto the lined oven tray.

Pop into the oven and bake for 12 minutes, then turn the oven to 'grill' and cook for a further 5 minutes to colour up.

Serving suggestions:

• Make golf ball-sized meatballs and then stir through a rich tomato pasta sauce once cooked, serve with your favourite pasta.

• Swap out the rosemary for coriander or Vietnamese mint. Make small bite-sized balls. Once cooked, pop a toothpick in each, arrange on a nice platter with a dish of sweet chilli sauce for dipping.

• Shape into burger patties for homemade chicken burgers... load up with a bit of mayo, avocado, and lettuce.
